Ethiopia Specialty Coffee - Guji

Guji Ethiopian coffee is traditionally naturally processed, a method deeply rooted in Ethiopia’s coffee heritage. After the ripe cherries are carefully handpicked, they are laid out to dry under the sun on raised African beds—still intact with their fruit. This drying process can take several days to weeks, during which the cherries are regularly turned to ensure even drying and to prevent over-fermentation. The natural process allows the bean to absorb sugars and fruitiness from the cherry, resulting in a cup that bursts with vibrant notes of peach, berries, and jasmine, and a full-bodied, smooth texture.
