Preparing coffee using Chemex

The elegant brewing tool with its wooden handle and leather strap, made in 1941, is an essential tool for every coffee brewing enthusiast. Its preparation is similar to any drip brewing tool, but this one requires a coarser grind.

What do you need?

First step:

I start by heating the water (1.2 to 1.4) liters.

Step two:

Prepare 50-60 grams of coffee

Step three:

While the water is heating, grind the coffee. The grind should be somewhat coarse, but finer than a French press grind.

Step four:

Place the filter and make sure that the side of the three layers is facing the pouring point.

Step five:

Moisten the filter with hot water to avoid the taste of the paper and to heat the glass, then discard the water.

Step six:

Place the ground coffee evenly for even extraction.

Step seven:

Start by pouring water to moisten the coffee, using twice the amount of coffee, making sure to moisten the coffee completely and avoiding the paper filter.

Step eight:

Let the coffee breathe (you will see bubbles form and the coffee swell) for 45-60 seconds.

Step nine:

Continue pouring the water carefully in the middle, stirring only slightly at the beginning, until the rest of the water is poured in at a sufficient rate so that the process is completed in 4 minutes.
