Finca Ince is located in one of Costa Rica's most important coffee-growing regions. Situated in the western Mediterranean Valley (San Isidro de Grecia), near the Poas volcano, the farms in this area boast fertile soil and excellent growing conditions. The area where Ince Sarchmore coffee is grown is small, covering approximately 2 hectares. It is surrounded by a forest of pine and cypress trees. The rest of the farm is planted with timber trees.
Today in Costa Rica, only a small percentage of coffee trees are disease-resistant, and the changing climate makes coffee cultivation challenging in the region. Sarchmore is no exception; the workers are working hard to provide the best possible conditions for coffee growing. The technical team has received extensive training to use a product suitable for the region, yet they still face challenges.
All processing takes place on the farm under strict quality control. The coffee beans are hand-picked and sorted by type. On the same day, they are transported to the factory. The washed coffee is dehulled and fermented for 12 hours. Afterward, it is rinsed with clean water and then taken to the drying beds. The drying process takes between 10 and 15 days, depending on the weather. During this time, any unsuitable coffee is usually removed. Finally, it is stored for a month to equalize its moisture content before export. Naturally processed coffee, like this one, floats in clean water before being taken to the drying beds in greenhouses. The drying time is 15-20 days. During this period, any unsuitable beans are selected.
