Finca Ines is located in one of the most important coffee growing regions in Costa Rica. The Western Central Valley (San Isidro de Grecia) is located near Poas Volcano. Farms in this area benefit from fertile soil and an excellent growing region. The area where Ines Sarchimor coffee is grown is small, approximately 2 hectares. The area is surrounded by a forest of pine and cypress trees. The rest of the farm has trees used for timber.
Today in Costa Rica, a small percentage of coffee trees are disease resistant. Climate change makes coffee cultivation difficult in the region. Sarchimor is no exception, as workers strive to provide the best conditions for coffee cultivation. The technical team has received extensive training to use a suitable product in the region, yet they face challenges.
All processing operations are carried out on the farm under strict quality control. The coffee beans are picked by hand and sorted by type. On the same day, the coffee is transported to the mill. Washed coffee is de-pulped and fermented for 12 hours. After that, the coffee is washed with clean water and then taken to drying beds for drying. The drying process takes between 10 to 15 days depending on the weather. During the drying period, unfit coffee is usually removed. Finally, it is stored for one month to balance the moisture content before export. Naturally processed coffee, like this coffee, floats in clean water before being taken to drying beds in sheltered houses. Drying time takes 15-20 days. During this period, unsuitable beans are picked out.
