Water Quality:
Water quality is an important factor in the taste of a cup of coffee, as it makes up more than 98% of the coffee. Water is a great solvent (especially hot water) because it can dissolve most types of molecules. Pure water interacts with the solid components of coffee differently than impure water (simply put, particles that make water hard or unpleasant in taste).
Usually, if the water tastes good on its own without any additives, it is likely good for making coffee. Unfortunately, this is not guaranteed every time or in all situations. The total dissolved solids (TDS) in water affect the coffee extraction process, and they need to be within an acceptable range. Some expensive bottled waters sold in stores that contain very low levels of dissolved solids may result in flavorless coffee, while tap water might be too hard and negatively affect the coffee’s taste. Using bottled water or filtered water (with a proper filtration system) is recommended for making good coffee. That’s why specialty coffee shops pay close attention to the quality of the water they use.
