6- Extraction time :

It is the time the water spends in contact with the ground coffee beans. Or it is the time it takes to brew the coffee.

Extraction is proportional to extraction time; the longer the extraction time, the greater the extraction. This occurs because the dissolved substances react with the solvent (water), and this reaction does not happen if sufficient time is not available. The extraction process can reach a point where no further extraction is necessary, regardless of the time. The longer the extraction time, the greater the body, flavor, bitterness, and acidity of the coffee.

If the extraction time is too short, the process will be incomplete, resulting in bland coffee. The goal of extraction is to extract the appropriate number and quantity of coffee beans to achieve a great taste. Therefore, the extraction time needs to be within a suitable range, which depends on several factors, including the size of the ground coffee beans and the type of filter used in the brewing process.
